The traditional first courses include a type of stuffed pasta called &#8220;agnolotti del plin&#8221; (literally &#8220;pinched&#8221;), fresh pasta known as &#8220;tajarin&#8221; (thin strips of egg pasta served with different types of sauces), rice from the famous rice area of Casale, and first courses made of rice and mushrooms or rice cooked in red wine, as well as rich vegetables soups, and &#8220;polenta&#8221; (a sort of cornmeal mush) with fried cod, a dish known as &#8220;comodato&#8221;.
