Grapes are separately harvested by hand in the first half of September.

Winemaking

Our two grapes are separately harvested and vinified. In the following Spring, the two varieties are blended for the addition of the liqueur de tirage; froth is achieved almost exclusively through the natural sugars already present from the grapes. The wine rests on its lees for at least 36 months before disgorging.
